A richly flavoured and versatile Wagyu cut, this Flap Meat features beautiful MBS 4–5 marbling for a juicy texture and satisfying beef flavour.

Cut from the lower sirloin area, Flap Meat has a loose grain that absorbs marinades exceptionally well. When sliced correctly against the grain, it delivers a tender bite with a deep, robust Wagyu character. Its generous whole-piece size makes it ideal for family meals, entertaining, meal preparation or food-service use.

Perfect for Korean BBQ, Japanese yakiniku, fajitas, steak strips, stir-fries, charcoal grilling or slow roasting.

Cutting and cooking suggestion:
Trim away any excess surface membrane, then identify the direction of the grain before portioning. For grilling or yakiniku, slice thinly against the grain and cook quickly over high heat. For larger steak portions, sear until caramelised, cook to medium-rare and rest well before slicing.
