What is Chuck Tail Flap?
The Chuck Tail Flap, also known as “Zabuton” in Japanese cuisine, and also know as “Denver” Steak, is a boneless cut from the shoulder area, specifically the chuck roll. It’s renowned for its intense marbling and robust flavor, offering a perfect balance between tenderness and beefiness. This cut is versatile and can be prepared in various cooking methods, making it a favorite among chefs and home cooks alike.
Cooking Tips:

Grilling: Preheat your grill to medium-high heat. Season the steak with salt and pepper, and grill for approximately 2-3 minutes per side for medium-rare. Allow the steak to rest for 5 minutes before slicing.
