Our Australian wagyu slices uses MBS 5-7 wagyu, it is perfect for sukiyaki or hot-pot. You can also add this quality cut to shabu-shabu where thinly-sliced beef and seasonal ingredients are stewed in an umami-rich kombu seaweed broth. The beef slices are cooked by swishing them in the boiling stock for a couple of seconds before being dipped in tasty sauce to eat.
Our Japanese wagyu slices are cut from A5 Ozaki beef, and has a MBS score of 11+. What makes the meat of this breed of wagyu extraordinary is that Mr Ozaki’s wagyu are bred differently. Their longer maturing time leads to what Mr Ozaki believes to be a more sublime texture, it is also flavoursome with a sweetness that emerges as you chew. Its fat melts in the mouth and is easily digested, so you can eat a whole slab of beef without being overwhelmed by its richness.
